Do you know of any good recipes for diabetic sweets?

And if you do, how long can I make them before Christmas so they are still nice. Thank you.

DIABETIC SWEET POTATO PIE

3 tbsp. butter
1/4 c. sugar
1/4 tsp. salt
1 egg yolk
3 tbsp. lemon juice
1 tsp. lemon peel
1/4 tsp. cinnamon
3 lg. sweet potatoes, cooked & mashed
1 c. milk
3 egg whites, beaten to stiff peaks
1 (9") unbaked pie shell

Heat oven to 350 degrees. Beat together butter, sugar and salt. Add egg yolk, lemon juice, lemon peel and cinnamon. Stir in sweet potatoes and milk; mix well. Fold in egg whites and pour into the pie shell. Bake for 40-50 minutes or until knife inserted in center comes out clean.

DIABETIC CAKE

Sweet ‘n Low to equal 2 c. sugar
2 eggs
2 c. self rising flour
2 c. sugarless applesauce
1 can pineapple packed in its own juice
2 c. raisins
1 c. pecans
1/2 c. Fleischmann’s butter
3 tsp. cloves
3 tsp. cinnamon
2 tsp. nutmeg

Mix all ingredients together and pour into greased and floured tube pan. Bake 45 minutes in 350 degree oven. Cake is better if frozen.

COOKIES FOR DIABETICS

1 1/2 c. biscuit mix
2 eggs
2 pkgs. low calories dessert pudding (butterscotch)
4 tbsp. Wesson oil (or other)
2/3 c. chopped dates
1/2 c. seedless raisins, if desired
1 tsp. vanilla

Mix all together. Form into small balls. Place on oiled cookie sheet. Flatten with fork, criss-cross. Bake 8 minutes at 350 degrees.

DESSERT FOR DIABETICS OR DIETERS
APPLE, STRAWBERRY DESSERT (DIABETIC)

2 c. chopped apples
2 c. strawberries
4 eggs
1 tsp. vanilla
1 tsp. sweetener
1 c. chocolate protein powder
1/4 c. nonfat dry milk
2 tsp. baking soda
1 c. unprocessed bran

Place the first 6 ingredients in blender and blend well. Pour into a large bowl; add other ingredients and mix with electric mixer. Spray a 9 x 13 inch or bundt pan with non stick spray. Bake at 350 degrees for 40 minutes. Makes 8 servings

Diabetic dessert

1 sm. box cherry sugar-free jello
1 (16 oz.) can lite (no sugar added) chunky fruit or fruit cocktail

Make jello with 1 cup boiling water. Mix until jello crystals melt. Add can of fruit (juice and all) and let set until firm.

DIABETIC DESSERT – HAWAIIAN DELITE

3/4 c. boiling water
1 (4 oz.) sugar-free Hawaiian pineapple Jello
1/2 c. cold water plus ice cubes to make 1 c.
1/2 tsp. vanilla
1 (8 oz.) carton plain low-fat yogurt
1 c. drained crushed pineapple
1 can drained mandarin oranges

Dissolve Jello in boiling water. Add cold water (remove undissolved ice cubes). Blend in yogurt, mixing well. Add vanilla and fruit. Pour into baked pie shell over 6 sherbet glasses.

Does anyone have any recipes for diabetic friendy and gluten free gift mixes in a jar?

I have friends with diabetes and celiac disease. either sugar free or reduced sugar recipes are appreciated.

Mixes in a jar are thoughtful and inexpensive gifts to give to anyone for any occasion. The idea is to layer dry ingredients of a cookie, cake, biscuit, muffin, beverage or other recipe decoratively in a jar and add directions of how to complete the recipe. The jar can be a mason jar or a recycled, clean mayonnaise or other large jar that has a lid and can then be decorated with fabric, ribbons, paint, etc.

I have seen these jars of mixes sell in retail stores for around $8.00! Imagine the savings if you were to make your own! A few inexpensive ingredients like flour, brown sugar, chocolate chips and a jar don’t cost very much! Gift recipients will love receiving a homemade mix from you so they can easily prepare a treat to enjoy and when they prepare the treat, they’ll be thinking of how thoughtful you are.

Mixes in a jar are excellent for gifts that need to be shipped because you don’t have to worry about baked goods getting smashed or getting stale. A mix will allow the gift recipient to freshly prepare the treat when it is craved or needed. They are also great to give to children’s teachers, neighbors and acquaintances because of the ease and money savings involved.

Peanut Butter Cookies

Empty jar of cookie mix into large mixing bowl. Thoroughly blend mix. Add:

* 1/2 cup butter, softened
* 1/2 cup creamy peanut butter
* 1 egg, slightly beaten
* 1 teaspoon vanilla.

Mix until completely blended. Shape into walnut sized balls and place 2 inches apart on a parchment lined baking sheets. Press balls down with a fork. Bake at 350F degrees for 9 to 11 minutes until edges are browned. Cool 5 minutes on baking sheet then transfer to a cooling rack to finish cooling. Makes 3 dozen cookies.

Applesauce Cake in a Can

1/2 cup shortening
1 cup granulated sugar (Splenda)
1 1/2 cups stiff applesauce, preferably homemade,
but a good quality canned applesauce will work
2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon cinnamon
1/2 cup raisins
1/2 cup chopped nuts.
1/2 cup chopped candied red and/or
green cherries (optional)

Grease and flour 4 empty Campbell soup cans. Shake out excess flour. Set aside.
Cream shortening and sugar. Stir in applesauce. Sift the flour, salt, soda, cloves, nutmeg and cinnamon together. Fold into creamed shortening mixture and stir until smooth. Turn into cans, dividing evenly. Bake at 325 degrees F for approximately 45 minutes, until a wooden pick inserted in middle comes out clean.
Remove from oven and let cool about 15 minutes.
Puncture bottom of can to release cakes and cool thoroughly before wrapping in plastic wrap, then colored cellophane wrap. Makes 4 cans.

Diabetic and looking for great vegetable recipes?

I am not vegetarian, nor vegan, but I am diabetic and cannot have "white" foods like potatos, white flour, pasta. I’m getting bored with most of my recipes. Could anyone give me some interesting, fun, healthy vegetable recipes. They would be perfect if they were also quick, but not a must. Thanks for your help.

I, too , am diabetic. I also find it hard to find recipes that don;t call for flour, sugar, rice, and potatoes. I do have a great recipe using broccoli and cheese, though it does call for a little flour (maybe there is a soy substitute for flour?). For this size, you will need a large stew pot.
(May be cut in half)

Take two broccoli crowns and boil them in 2 large (the economy size that you find on the in the grocery store that has the "institutional size" servings) cans of chicken broth until the broccoli is tender. Meanwhile, in another smaller pan, melt 1/2 stick butter or margarine. Add flour to make a roux:

Once the broccoli is tender, slowly add some of the liquid from the broccoli/broth mixture into the roux until the consistency of pie curst. Add about 1/2 cup of milk. Pour this mixture into the pot with the broth and broccoli. Add 2 packages of cheddar cheese and stir until all is mixed together. If it is a little lumpy, don’t worry, it will even out when you finish simmering for about 30 minutes. Be careful not to burn it, though. Keep an eye on it and stir often. This makes the most delicious broccoli cheese soup I have ever eaten. Here are some more ideas:

DIABETIC DESSERT

1/3 c. butter, softened
1/4 c. brown sugar substitute
2 tsp. liquid sweetener or 1/3 c. Sprinkle Sweet
1 egg
1 1/3 c. flour
3 tbsp. cocoa
2 tsp. baking powder
1/2 tsp. soda
1 tsp. vanilla
1/2 c. skim milk

Combine butter, brown sugar substitute, diabetic sweetener, and egg. Beat 2 minutes at high speed. Add remaining ingredients and blend 2 minutes at low speed. Pour into 8 inch square pan and sprinkle with chopped nuts. Bake at 350 degrees for 25 to 30 minutes. Frost with diabetic whip, if desired.

I’m making xmas cookies for gifts this year and wanted to bring in my grandma some, but she can’t have much sugar since she has diabetes..
Anyone have any ideas? I know cookies have sugar but I just maybe thought if anyone had any ideas?

Any good diabetic recipes for Christmas goodies?

I usually make goodies baskets for everyone at Christmas. My Step-mom just found out she is diabetic. I still want to give them a basket, but I don’t have any appropriate recipes. Any ideas? I usually make several cookies and candies.

Diabetic recipes that freeze well?

I need some diabetic recipes that freeze well to be taken out and cooked or reheated later. An elderly man in my Sunday School class is married to a lady who is confined to a wheel chair and I want to take several things over so he won’t have to cook for a while. They are both diabetic so I have to be careful with the ingredients. Can anybody help?

I would like to get any diabetic recipes you might have nothing for like meals for muffins cookies bread or snacks. I have a young brother that would love so different things to eat. Also i would like a diabetic recipe for the bread maker if anyone has one

Here are a few recipes taken from a Diabetic Cookbook of mine.
"Blueberry Muffins"
1-1/3 c. all-purpose flour
1c.quick-cooking oats,uncooked
1/4c. Splenda brown sugar substitute
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. skim milk or 1%milk
2 large egg whites
3TBsp. canola or vegetable oil
1c. fresh or frozen blueberries, thawed,drain
non-stick cooking spray
1.Preheat oven to 425* Coat a regular size muffin pan with cooking spray.
2.Mix all ingredients together in a medium bowl,stir
gently just until blended.Don’t overmix.Muffins will be tough.Gently fold in blueberries."Will be Lumpy
3.Spoon batter into muffin pan,filling each cup about 3/4 full. Bake for 25 mins. or until golden.
Makes 1 dozen.

"Double Chocolate Brownies"
6 TBsp.margarine,(stick)softened
1/2 c. Unsweetened applesauce
2 large eggs
1 tsp. vanilla extract
3/4 c. all-purpose flour
1 c. Splenda Blend
1/2 c. semisweet chocolate chips OR mini
chocolate chips
6 TBsp.Unsweetened cocoa powder
1tsp. baking powder
1/4 tsp. salt

1.Preheat oven to 350* & coat a 8×8-inch baking pan with cooking spray.
2.In a large mixing bowl beat margarine applesauce eggs & vanilla until well blended.
3.Now,stir in flour,Splenda,chocolate chips,cocoa
baking powder & salt until blended.
4.Spread batter in baking pan.Bake for 18-20 min
or until top springs back when gently touched. Cool completey. Cut into 16 squares. store in air
tight container at room temperature.Makes 16 Brownies. 1 Brownie =105 Calories

2 large egg whites
4 tsp regular Splenda
1 -1/4 tsp. vanilla extract
1/3 c. mini semisweet chocolate chips
1.Preheat oven to 375* & spray a cookie sheet with non-stick cooking spray.
2.In a medium bowl,combine the oats,flour,baking powder, & salt; set aside.
3.In a large bowl,mix the margarine,Splenda brown sugar substitute,regularSplenda,egg whites
and vanilla extract with a electric mixer.Stir in the dry ingredients until well blended. then add the chocolate chips.
4.Drop the dough by rounded teaspoonfuls onto cookie sheet. Bake for 8-10 mins. or until lightly browned. Cool on a wire rack.
Makes 3 dozen cookies
1Serving size= 2 cookies & 100 Calories
