What kind of birthday cake can I make for a diabetic?

Tomorrow we’re celebrating my mom’s birthday, and I planned on making a cake, but she is diabetic. She is still only a diet regulated diabetic, so she can have small amounts of sugar, its more of a points base system depending on how many carbs and such she consumes everyday.

Anyways, I’m looking for a recipe that will be good for her. She has a horrible sweet tooth, and loves chocolate (so often I find her cheating on her diet! :p) Any ideas?

Make her zucchini bread. That doesn’t have too much sugar in it and it’s tastier than it sounds.

You could always make her a big loaf of corn bread and add some nuts and some dried cranberries. It’s sweet but not too sweet as it doesn’t have much sugar.
