Do you know of any good recipes for diabetic sweets?
And if you do, how long can I make them before Christmas so they are still nice. Thank you.
DIABETIC SWEET POTATO PIE
3 tbsp. butter
1/4 c. sugar
1/4 tsp. salt
1 egg yolk
3 tbsp. lemon juice
1 tsp. lemon peel
1/4 tsp. cinnamon
3 lg. sweet potatoes, cooked & mashed
1 c. milk
3 egg whites, beaten to stiff peaks
1 (9") unbaked pie shell
Heat oven to 350 degrees. Beat together butter, sugar and salt. Add egg yolk, lemon juice, lemon peel and cinnamon. Stir in sweet potatoes and milk; mix well. Fold in egg whites and pour into the pie shell. Bake for 40-50 minutes or until knife inserted in center comes out clean.

DIABETIC CAKE
Sweet ‘n Low to equal 2 c. sugar
2 eggs
2 c. self rising flour
2 c. sugarless applesauce
1 can pineapple packed in its own juice
2 c. raisins
1 c. pecans
1/2 c. Fleischmann’s butter
3 tsp. cloves
3 tsp. cinnamon
2 tsp. nutmeg
Mix all ingredients together and pour into greased and floured tube pan. Bake 45 minutes in 350 degree oven. Cake is better if frozen.

COOKIES FOR DIABETICS
1 1/2 c. biscuit mix
2 eggs
2 pkgs. low calories dessert pudding (butterscotch)
4 tbsp. Wesson oil (or other)
2/3 c. chopped dates
1/2 c. seedless raisins, if desired
1 tsp. vanilla
Mix all together. Form into small balls. Place on oiled cookie sheet. Flatten with fork, criss-cross. Bake 8 minutes at 350 degrees.

APPLE, STRAWBERRY DESSERT (DIABETIC)
2 c. chopped apples
2 c. strawberries
4 eggs
1 tsp. vanilla
1 tsp. sweetener
1 c. chocolate protein powder
1/4 c. nonfat dry milk
2 tsp. baking soda
1 c. unprocessed bran
Place the first 6 ingredients in blender and blend well. Pour into a large bowl; add other ingredients and mix with electric mixer. Spray a 9 x 13 inch or bundt pan with non stick spray. Bake at 350 degrees for 40 minutes. Makes 8 servings

1 sm. box cherry sugar-free jello
1 (16 oz.) can lite (no sugar added) chunky fruit or fruit cocktail
Make jello with 1 cup boiling water. Mix until jello crystals melt. Add can of fruit (juice and all) and let set until firm.

DIABETIC DESSERT – HAWAIIAN DELITE
3/4 c. boiling water
1 (4 oz.) sugar-free Hawaiian pineapple Jello
1/2 c. cold water plus ice cubes to make 1 c.
1/2 tsp. vanilla
1 (8 oz.) carton plain low-fat yogurt
1 c. drained crushed pineapple
1 can drained mandarin oranges
Dissolve Jello in boiling water. Add cold water (remove undissolved ice cubes). Blend in yogurt, mixing well. Add vanilla and fruit. Pour into baked pie shell over 6 sherbet glasses.

I am not exactly sure what diabetics can’t eat, other than too much sugar. Could you make the sugar cookie recipe or any cookie recipe with a sugar substitute? Then you need to find the equivalent to regular suger. 1 cup = ? substitite

I am not only a former chef I am alos a level 2 diabetic, and with the availablity of sugar substitiutes like Splenda, Nutra Sweet and evn one called stevia, it come in liquid and powder.
I make all the traditional recipes with either white splenda or brown sugar type, but carbs are also a big issue for diabetics, they to can elevate the blood sugar levels, fats to have to be reduced, as most diabetic have both weight issues and like me a cholesterol problem brought on by my meds.
Things can be made with low fat marg or a combo of it and a small amount of butter, flours like rice, Whole wheat and rye make things have less carbs.
Just adapt things for this method, there are alot of recipes on the packaging and at the American and Canadian Diabetic Associations websites, you can still enjoy things but with less fat, sugar and carbs if done right.

I don’t know a name for this but it was given to me awhile back:
Fat free graham crackers, sugar free french vanilla pudding mix, 1 cup cold fat free (1%) milk, and small tub sugar free cool-whip.
Directions:
In a 13x9in pan line bottom with graham crackers
Mix 1 cup milk with the sugar free pudding mix
let stand 5 minutes to thicken
add cool-whip to pudding whisk in until blended
pour small layers over graham crackers
repeat ending with graham cracker
