Good recipes using turkey or chicken?

We’ve recently started our family on a limited red meat and low fat/low carb diet to combat my daughter’s pre-diabetic condition and high triglyceride levels. We’re getting a little worn out with grilled or baked chicken and turkey, turkey chili and chicken spaghetti… Anyone have any yummy recipes they could share that use white meat, boneless/skinless cuts of chicken and turkey, and/or ground chicken and turkey? Thanks!

I am now on a diabetic diet… I need ideas for dinner with the following items.. …?

i need the dinner to include 1 starch, 1 fruit, 1 milk, 1-2 vegetables, 3 meats, 2 fat…. those are all portions,

Any help would be great! :)

Ingredients :

1/4cuppart-skim ricotta cheese
1/4cupwhipped cottage cheese
2tbllow-fat cream cheese
2tspsugar
2tspany extract
(try orange, vanilla, strawberry, almond)
12xegg substitutes
1/4cupevaporated milk
Cooking spray as needed

Method :

* Cut a pocket in each slice of bread. Open carefully.
* With an electric beater, whip together the cheeses, sugar, and extract. Spread the mixture evenly into each bread pocket.
* Beat together the eggs and milk. Dip the bread slices in the egg-milk mixture. Turn to coat both sides.
* Heat a nonstick pan over medium-high heat. Coat with spray. Cook the toast on each side for about 3 to 4 minutes per side until golden brown.
* This recipe yields 6 servings. Serving Size: 1 slice (2 egg substitutes).
* Comments: Stuffed French toast with a creamy filling is good paired with a fibrous fruit such as a 1/2 cup fresh raspberries. 6 slices challah or French bread, cut 2 inches thick (if you can find whole-wheat, the better)
* This French toast is high in sodium, primarily because of the cheeses. For a lower-sodium dish, substitute no-salt cheeses if you can find them.

15-Minute Chili

1lbground turkey
1cankidney or pinto beans – (15 oz) drained, rinsed
1canlow-fat low-sodium chicken broth
1candiced tomatoes – (14 1/2 oz) undrained
(flavored with chilies, preferably)
1cantomato paste – (6 oz)
1tblchili powder
1/8tspcinnamon
1/4tspcumin
1/2tspfreshly-ground black pepper

Method :

* In a large nonstick saucepan, brown the ground turkey until it is no longer pink. Drain off any excess fat.
* Add the remaining ingredients and bring to a boil. Lower the heat and simmer for 10 minutes.
* This recipe yields 4 servings.
* Serving size: 1 cup.

What are some practical ways to avoid severe conditions of Hypoglycemia?

My g-friend suffers severe conditions of hypoglycemia such as becoming incoherent and lethargic. What should I do when this occurs and what are things she can do to prevent these symptons before they occur.

The blood glucose level may fall too low or too fast. Some people then experience the symptoms of hypoglycemia.

Some snack and meal suggestions that meet the goal of including a complex carbohydrate, a protein source and fat include:

sandwich
yogurt and fruit
cottage cheese and crackers
turkey, cheese slices and veggies on a salad
salad with beans added
peanut butter and crackers
low fat cheese and crackers
bean soup and crackers
low fat cheese on bake potato
bagel and lowfat cream cheese

Eat at least three regularly spaced meals 3 to 5 hours apart) daily. Include snacks if needed. Eat at the same time each day. Avoid skipping meals. This can be accomplished without weight gain by staying at a healthy caloric intake (distribute total calories throughout the day). Avoid sugar and foods and beverages containing sugar, especially on an empty stomach. An occasional sweet food consumed in a small amount with a meal may be tolerated.

Include at each meal or snack:

Complex carbohydrate: fruit,vegetable,starch or grain product.
Protein source: lowfat meat, lowfat dairy product, legume, peanut butter.
Fat source: oil, margarine,lowfat mayonnaise (fats may be hidden in carbohydrate and protein). Use these fats sparingly. Distribute meals and snack calories as evenly as possible throughout the day.
Limit alcohol. Drink alcohol only with food and only with health care providers approval.

Avoid caffeine (in coffee, tea, cola drinks, chocolate)

Eat 1 to 3 hours before exercise. Extra calories may be needed before exercise to compensate for calories burned.

Stuffed Turkey Tenderloin
Yield: 2 tenderloins (4 servings

Ingredients

2 small turkey tenderloins (about 1/2 pound each)
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 cup chopped onion
2 cloves garlic, minced
One 4-ounce can chopped green chilies, or 1/2 cup mild giardiniera pepper-vegetable mixture, drained
1/2 cup coarsely chopped cilantro
1 tablespoon olive oil

Directions

Prepare a charcoal grill or preheat the broiler.
Cut a pocket horizontally along the side of each tenderloin, making sure not to cut all the way through. Season with salt and pepper.
Spray a medium skillet with non-stick pan spray. Saute the onion and garlic until softened, about 3 minutes. Stir in the green chilies and cilantro.
Stuff the onion mixture into the pockets in the tenderloins; secure with small metal skewers or wooden toothpicks. Brush the tenderloins lightly with oil.
Grill, covered, over medium-hot coals, or boil 6 inches from the heat source, about 8 to 10 minutes per side or until the tenderloins are cooked through. Cut on the diagonal into 1/2-inch slices.
